More about Bell Peppers that meet the eyes...


Growing up I was taught that eating carrots was good for your eyes! Bell peppers are also high in lutein, and vitamin C to keep your eyesight sharp! These nutrients act like a sun shield for your eyes, protecting the delicate macula a tiny disc at the back of the eye that transmits images to the brain and the lens from UV damage. A cup of diced or sliced red, yellow and orange peppers contain nearly 200 percent of your daily dose of vitamin C, nearly twice what you 'd get in an orange!


I get my trio of peppers weekly from Trader Joe's, dice them up, and I have them in my daily salads. I am delighted to know that all my weekly prep work has such benefits!
